Right now we have only weight and Unit Volume but it would be very handy to also have the dimensions of the three seperate dimensions.

It is for a proces. I mean for calculating shipping costs these are must have properties, this because there are some constraints based on the length. For example a box greater than 2m costs more to ship than the box of same volume and weight which the longest side is less than 2meters.
I fail to see why it should be moved to an attribute.
I mean, there's a difference between packaging dimensions and real product dimensions. I can see the real product dimensions as attributes but packaging dimensions really should be on item itself IMO. As weight and volume are there... Volume could be even calculated from these dimensions.
Well they can contain UoM but in the current context I am using this not.
The reason I am suggesting this is because it's an property of an item. Depeding on these values defines the way of transportation. Example longer things than 2 meters cant be delivered by means of an parcel service. Basically volume and weight isn't enough. Volume is calculated from the dimensions.
For me it would make perfect sense to have this kind of information on the item table because every physical item have these properties, depending on the locale these can be showed as imperial or metric.
